SOOO easy, so GOOD!

Andrea, for you. Seriously these are really easy and good. During these fall festives I like to have these two ingredients on hand at all times. And to make them extra yummy we put cream cheese frosting on top. So you mix together a can of pumpkin and any type of spice cake mix. Drop them by the spoonful on a cookie sheet. I bake them at 400 for 12 min but depending on how big they are the time could be different. Poke your finger on the top and make sure they aren't doughy. And I learned a new trick that worked really well. If you buy store bought frosting, put it all in a mixer and it fluffs it up, doubling the amount you bought and cutting in half the calories. Never a bad thing. Try them and enjoy them... we sure do!

2 more posts already? you are on fire! i LOVE pumpkin cookies and i am so making them asap. and i usually make them from scratch, of course, but this sounds much easier. however, i'm not sure about lightening up the frosting in the way of calories. tis the season to eat eat eat!!

I actually found a spice cake mix and I already have the canned pumpkin...only problem - I forgot to ack you the recipe. I'm glad I looked on the blog!

Your girls are adorable, by the way. The pictures of them in the hay maze, sooo cute! I miss them, and you! Kate's hair is soo long! She's so big! Where has time gone?!? I wish we were closer, especially at holiday times. I used to miss family during the holidays and now I long to be with old friends!

I tried your recipe. They were sooo good. In the past I've made them from scratch, but these are awesome. By the way, your kids are so adorable. I can't believe it's been that long since the last time we saw you guys.
